Here are the Wichita Falls-Wichita County Public Health District’s restaurant inspection scores for Wichita County, conducted June 24-30.

Scores in each category are displayed based on the most recent inspection date. The Health Department conducts regular restaurant inspections to keep residents and visitors safe.

From June 24 to 30, the department conducted assessments and/or inspections at 32 locations. Inspections for temporary events are not included.

Inspector’s comments:

  • Food stored on the floor in a freezer

  • Improperly stored chemicals. On countertops near food contact surfaces.

  • Dating and labeling not in use

  • Dirty cleaning cloths stored in the three-compartment sink

  • Approved defrosting method not used. Defrosted boxes of turkey croissant sandwiches on the counter were still at temperature, so the inspector had the kitchen helper move them to the walk-in refrigerator.

  • Sinks are full of crumbs and sticky substances. Microwave and can opener are dirty.

  • Countertops have food residue. Cabinet doors are splattered with food residue.

  • The floor beneath the equipment must be cleaned.

Inspector’s comments:

  • The contents of the actual refrigerator—shrimp, sausage, chicken—were 52 F when 41 F or lower is required, and were thrown out. The contents of the table on the stove were 55 F—chicken, shrimp, cut vegetables—and were thrown out. The contents of the sushi rail were 62 F—beef, chicken, shrimp, raw egg—and were thrown out.

  • Several refrigeration units lacked thermometers. Time/temperature controlled refrigeration units for safe foods should have accurate and easily visible thermometers available.

  • Discard 6# can bamboo shoots and 6# can water chestnuts due to damage to the rim. Cans with dented rim or seam should be discarded or returned to the distributor.

  • Hand wash sink at sushi bar had no soap. Hot water, soap and paper towels are required for proper hand washing.

  • Cockroaches were observed in the dry goods storage area. Missing ceiling tiles in the kitchen and worn/broken back door sweeper make it easy for pests to enter and should be repaired or replaced.

  • Moist wipes were kept on various food preparation surfaces. Wipes should be stored in a labeled bucket with sanitizer when not in use to prevent the growth of pathogens.

  • Food was stored on the floor of the walk-in refrigerator. Food should be stored at least 6″ above the floor to protect against sources of contamination.

  • Beef was thawed in water in the sink. Thawing should be done under running water at 70 F or less, in the refrigerator, in a microwave, or as part of the cooking process.

  • The ice cream scoop was stored on a milk crate next to the ice cream machine. Ice cream scoops should be stored on a cleanable surface such as a pan, food grade bucket, or ice cream scoop rack. The blade of the can opener has dried food particles on the blade and should be cleaned and sanitized.

  • Plastic light shield missing from one of the kitchen fixtures. Proper shielding is required to protect against contamination or injury in the event of a blown bulb. Men’s and women’s restrooms should have signs reminding employees to wash their hands before returning to work.
