San Miguel de Allende’s wine scene has been heating up for years, making this opening ripe for local collaboration. The hotel has partnered with Santísima Trinidad, bringing a range of their wines, such as a Sauvignon Blanc, White Blend (Chardonay, Macabeo & Moscatel) and Cabernet Sauvignon, to life alongside the vibrant NŌIA menu, showcasing Chef Tovar’s vision.

“Founded near San Miguel de Allende in 2012, Viñedo Santísima Trinidad has been working to create experiences around the fantastic wines that Guanajuato produces. That’s why we’re excited to partner with Numu Boutique Hotel San Miguel de Allende, as they help us bring people closer to our terroir.
